if you get them in full mount let them turn you then press r3, just another submission moves, so wait till there stamina isnt very high then go for it :)

You can also get to this position from a sprawl. 2 easy transitions and you are there.

Armbar is from mount, or if you are a judo fighter, you can counter a punch into a flying armbar.

once the sub attempt is locked in tap X, CIRCLE, TRIANGLE and SQUARE as fast as you can. Make sure your opponents stamina is low. If you haven't already, enable the stamina bar in options.

I believe if your character has good submission offence/defence then rotate the stick, but if your character is a striker with high points you're better brute forcing your way out using x/o/square/triangle

Either full mount as said above, or some fighters are able to do it from a head clinch. I know my kickboxer/bjj fighter can do it (think it's bjj you need). Just get the single collar tie and click R3 (might need to hold L1 at the same time). The fighter will drop straight into armbar. Was my favourite way to finish a fight until I worked out how to do triangles (though I haven't finished a match with that one yet).
